Makes 4 Jnr’s.

THE DOUGH
1 c warm water
1 t sugar
1 t dried yeast
½ t salt
1½ c + 2 T strong white flour or gluten-free flour
TO ASSEMBLE
¼ c Ceres Extra Virgin Olive Oil
Fresh rosemary sprigs
1 t flaky salt or more if you like it saltier!
METHOD
In a bowl, mix all the dough ingredients together with a spoon. The mix should be sticky and a little bit shaggy. Now leave to rise, covered, in a warm place for 1 hour, or until doubled in size.
Beat down with hands and ‘knead’ the dough for 1 minute. Don’t take the dough out of the bowl, just fold it over itself a few times.
Divide the dough into 4 balls. Brush the bottom and sides of 4 Ironclad Jnr pans very liberally with olive oil. Place a ball of dough in each pan. Turn the dough upside down so both sides are covered in olive oil.
Preheat your oven to 220°C fanbake.
Plunge your fingertips deep into the dough, right to the bottom of the pan so the olive oil oozes up through the holes. Scatter with rosemary and salt and leave, covered with a tea towel, to double in size in a warm place for 30 - 45 minutes.
Bake for 15 – 20 minutes until golden and crispy top and bottom. Remove from oven and drizzle with a little extra olive oil on top.
Remove from the pans swiftly to cool on a wire rack so the bottom stays nice and crunchy!
Serve with EVERYTHING.
