The daily ritual

Clean the pieces you have used, dry them properly and wipe on the thinnest coat of oil. A little care after dinner keeps the set ready for its next meal

Ingredients

Warm water
Brush or scraper
Dish soap
Tea towel
Ironclad Balm or cooking oil

Method

Let the iron cool a little, then separate the pieces you have cooked with. They are easiest to clean while still warm, before the food has time to dry.

Wash with warm water and a brush or scraper, adding a little dish soap if you need it. Work around the rims and fittings, and between the trivet’s rings.

Rinse well and dry each piece with a clean tea towel.

Give the pot and lid a little time separately over low heat to dry the last few drops. Dry the trivet thoroughly with the cloth.

When the iron is cool enough to touch, rub a little Ironclad Balm or cooking oil over the cleaned surfaces. Wipe again with a clean part of the cloth until the iron looks almost dry.

Wipe the bale clean and dry it well. Once everything has cooled, put the set away somewhere dry.

 

Good to Know

The cleaning depends on what you have cooked. Bread may leave little more than crumbs; a roast can leave juices cooked onto the base and around the sides. Clean the pieces you have used and leave the others as they are.

Warm water and a brush do most jobs. A little dish soap helps with grease without undoing the seasoning bonded to the iron. A wash by hand is all the set needs, rather than a soak or a turn in the dishwasher.

A tea towel takes care of most of the water, and a little warmth on the stove finishes drying the pot and lid. The trivet’s rings and the fittings give water a few places to linger, so work the cloth into those spaces too.

You only need enough oil to leave a thin film. If you can see wet streaks or oil gathered in the corners, use a clean part of the cloth to spread it out and wipe away the excess. A thinner coat keeps the surface from becoming sticky.
